Dorset Apple Cake

This is a recipe (slightly adapted by me to be milk free) given to me by someone from one of the churches I work for (we had it at a bring and share meal):
8oz self raising flour
4oz margarine
4oz caster sugar
grated lemon zest of 1 lemon
4oz marzipan cut into small pieces
3 desert apples peeled, cored and cut into small pieces
2 eggs beaten (and a little rice milk if the mixture turns out too dry)
preheat the oven to 180C
rub the flour and marg together then mix in all the dry ingredients. Mix in the egg with a metal spoon then put the mixture in a cake tin. I suggest you line it with grease proof paper as this cake does seem to like to stick to the tin!
In the oven it goes and check it after about  40 minutes.

Now, R and I are a great fan of marzipan anyway, but this cake really is lovely. Cake is a big hit in our household at any time, but this got a resounding subzero from R and that is our considered opinion (spoken though a mouthful of cake…)
