The on going quest to eat less meat continues. I confess, i am rubbish at spices. I wish I could find spice recipes, you know, put these spices in for this weight of veg or meat…
Anyway, this chili had sweet potato, butternut squash, mushrooms, courgette, green lentils, kidney beans, tinned tomato…. and possibly other veg I can’t remember… along with chili, and a little turmeric, coriander, cumin… and the two shallots I had left over along with a bit of garlic.
Surprisingly it didn’t taste horrible although R felt it was the vegetables to a meat or perhaps veggie sausage dish. Anyway, we ate it and we give it a rating of OK.
