Slow cook chicken pilaf

Dinner turned out to be rather yummy. It was the first time I had used the “high” setting on the slow cooker, and the sun dried tomato and chicken pilaf was better than I thought. Even without the pesto. I mean, how hard could it be to buy pesto without any milk in it? Impossible it seems. 
Anyway, it still had its chicken, onion, garlic, chopped tomatoes, sun dried tomatoes, chicken stock, brown basmati and wild rice. Plus the obligatory salt and pepper – I also put a slosh of soya cream in it in an attempt to make up for the lack of pesto.

Both R and I really enjoyed this meal, we had it with fresh lettuce from the garden (the recipe said rocket but i didn’t have any) with lemon and olive oil. It is definitely one we will do again. It was in line with our new health drive, comforting, filling and as far as we are concerned, subzero.
