Yummy remade leftovers
We had my niece round for dinner the other night. We ate marinaded chicken – it was in a mango/chili sauce. and as it happened there was some left over, uncooked and still marinading. I also had some onions from my garden plot, so the chicken and mushroom tart and the vegi tart we ate yesterday seemed like a good plan.
It was! For once my herby pastry came out right – its just short crust with mixed herbs, salt and pepper, but I seem to have a love hate relationship with pastry. I mean how hard can flour marg and water be?
Anyway, the left over marinaded chicken and mushrooms made one nice tart and caramelised onion, left over swede and sweet potato made the vegi one. Both R and I enjoyed them and he has gone to work with the left over, remade leftovers! It gets a rating of cool from us.
