Sweet potato falafels

I have gone back to being vegetarian (I may have already mentioned the, its been a long week). Of course this time of year that makes life interesting as R can’t have milk in hay fever season.
Today I made sweet potato falafels – microwaved sweet potato mashed with lemon juice, garlic, coriander, cumin and flour – all baked in the oven then munched with pitta, coleslaw, avocado and houmous.

R and I enjoyed them although the falafels could have had more spice… so its get a foodie cool board rating of OK from us.
